2.5 oz. (70g) rolled oats
1 tbsp. chia seeds
5 fl oz. (150ml) almond milk
⅛ tsp. vanilla extract
pinch of salt
3 tbsp. soy yogurt
½ oz. (15g) vegan white chocolate, melted
zest of 1 lemon
Mix all the ingredients in a cup or glass, set aside to rest for a few minutes, then cover with the soy yogurt. Chill in the refrigerator for 1 hour.
Melt the white chocolate and place a thick layer over the yogurt. Chill the oats overnight, then next morning top with lemon zest and serve.
Double or triple the ingredients for a perfect meal prep breakfast or post workout snack.
